Jangajji is a K-pickle. The difference from regular pickles is that it uses soy sauce instead of salt when making the brine. Therefore, it has a deeper and more savory flavor than pickles. Garlic jangajji is made by putting garlic into the jangajji brine. As time passes, the spicy taste of the garlic disappears and only its pleasant flavor remains, acting as a palate cleanser when eaten with K-BBQ, which is why it is a jangajji that Koreans frequently eat.

INGREDIENTS

700g garlic
1 1/4cup water
3/4cup soy sauce
1/2cup sugar
3/4cup vinegar
Boil the water, soy sauce, and sugar. Let it cool, then add the vinegar (jangajji brine)
Wash garlic and mix it with jangajji brine
Store in the refrigerator for at least 5 days

NOTES

You can start eating it after about 5 days, but I personally prefer letting it mature for 2 weeks to 1 month. This helps mellow the sharp spiciness and develop a deeper, richer flavor
Sometimes the garlic may turn slightly green. This does not mean it has spoiled. It’s simply a natural color change caused by enzymes in the garlic, and it is perfectly safe to eat
